I know for me, breakfast is the hardest meal of the day to fit in to my busy schedule. Breakfast needs to be fast, healthy, and keep me full until lunchtime. I’ve found these five quick meals to be tasty solutions to the breakfast problem. Let me know how you like them in the comments!


1. Give your Yogurt a Boost

Add 2 tablespoons of oat bran – which is known to help you feel full – to your yogurt. Take it to the next level by using plain Greek yogurt, which has twice the hunger fighting protein. You can also add chia seeds for a similar stomach filling benefit. Throw in some berries or other diced fruit and get a nice dose of vitamins. I buy frozen berries and toss them in the microwave for 20 second or so to defrost them. That way, I don’t have to worry about keeping fresh fruit around.


2. Toast with Nut Butter

Putting nut butter on a whole grain toast is a fast, easy and filling way to start your day. Almond butter is my personal favorite, but you can go with cashew, peanut or sunflower seed butter. Nummy!


3. Egg Muffins

No, I didn’t say egg mcmuffin. Make-ahead egg muffins are a time saving morning treat. Mix eggs, veggies, and cheese together, pour into a muffin tin and bake at 400 degrees for 20 minutes. You can then freeze them or put in the fridge. When you are ready to eat toss one in the microwave for a minute or so, you have a quick, hot, breakfast. There are lots of recipes out there for this sort of thing, but I find that just about any mix works. I’ve even stuck my leftover dinner fajita meat and veggies in. These are also keto and paleo friendly!


4. Fruit Smoothies

5. Apple and Cheese Quesadilla

I discovered this quick easy recipe at parenting magazine. Simply take a whole wheat tortilla, fill it with shredded sharp cheddar and some apple slices, throw it in the microwave for 30-45 second and voilà, a healthy, fast, filling breakfast.
